Breakfast Toast Cups
In this recipe: Higher Fibre Loaf
You can choose to make this recipe using regular or mini muffin tins!
Ingredients
- 3-9 slices of COBS Bread Higher Fibre Loaf
- 6 Eggs
- 6 cooked Bacon Strips
- 3 tbsp Chives, finely minced
- 3 tbsp Grana Padano, finely grated
- 3 tbsp Cooking Oil
Directions
- Preheat oven to 450F
- Using a bread knife cut the crusts off 8 slices of Cobs Bread Higher Fibre Loaf
- If you are using a mini muffin tin you will likely only need 3-4 slices, and should cut each bread slice into quarters
- Brush cooking oil into the muffin tins & place bread in so it sits nicely
- In a bowl whisk eggs, chives and Grana Padano
- Fill each muffin tin with the egg mixture, approx 4 tbsp of mixture
- Top with desired amount of cooked bacon crumbles
- Bake for 12 minutes or until breakfast cups are golden brown in colour
