Green Goddess Sandwich
Filled with nutrient-packed veggies – this Green Goddess sandwich is both delicious and healthy!
Ingredients
- 1-2 slices Country Grain
- 1.5 oz goat cheese
- Handful of sprouts
- Handful of spinach
- 6 slices of cucumber
- 1-2 tbsp pesto
- 1 leaf of green leaf lettuce
Directions
This is a super easy sandwich to prepare. Simply layer your green ingredients and top with cheese.
Dietitian’s Tips!
- Wondering how to spice up your sandwiches? Turn it into a panini! Substitute the goat cheese for 1 slice of mozzarella, sub the lettuce for basil and/or tomato, add some chicken breast, and throw it onto the grill.
- This sandwich recipe is loaded with green vegetables. Health Canada recommends eating at least 1 dark green vegetable per day (ex. spinach, kale, broccoli, etc.). This is because dark green vegetables are good sources of folate, magnesium, vitamin K, and are rich in antioxidants!
- Experiment with a variety of greens in this Green Goddess sandwich. Other green vegetables that go well in sandwiches include: arugula, roasted zucchini, green peppers, and avocado.
