Green Goddess Sandwich
We’ve sandwiched all of the best green vegetables between our nutty and Cape® Seed Loaf to create the ultimate lunch! This Green Goddess Sandwich is a surefire way to take your lunches from meh to marvellous.
Ingredients
Green Goddess Sauce
- 1 stalk Spring Onion
- 1/2 tsp Minced Garlic
- 1 1/2 tbsp Mayonnaise
- 1/4 Lemon, juice
- 1/4 cup Parsley, not packed
- 1/4 cup Basil, not packed
- Pinch of Salt & Pepper
Sandwich
- 4 x COBS Bread Cape Seed Loaf, sliced regularly
- 1 cup Canned Green Peas, drained
- 1 tbsp Butter
- Pinch of Salt & Pepper
- 2 tbsp Mayonnaise
- Butter Lettuce, 4 leaves
- 6 slices Cucumber
- 1/2 Avocado, sliced
- Peashoots
- 4 slices Mozarella
- 2 tbsp Green Goddess Sauce
Directions
- Make your green goddess sauce by adding basil, parsley, spring onions, lemon, minced garlic, mayonnaise, salt & pepper to a food processor. Blitz until all ingredients are combined & sauce is a runny consistency.
- Place butter in a non-stick sauce pan and turn on element to med-high heat. Add drained green peas when butter is hot. Cook for 10 minutes stirring occasionally. Season with salt & pepper.
- Transfer cooked green peas to a small mixing bowl, add mayonnaise & green goddess sauce and mash green peas to desired consistency.
- Toast Cape Seed loaf slices, if desired.
- To assemble the sandwich, we recommend the following order: mashed green peas, mozarella, cucumber, avocado, bean sprouts.
